We decided to do a post on Bun Omelette Masala because this is something one rarely finds in restaurants outside india. Yet a quick omelette or a scrambled egg on a food cart was quite common for us growing up in Pune. It reminds us of our student days where this would be a great value meal.
The omelette culture thrives even now through many irani cafes or derivatives there-off and through many mobile foodcarts. There are as many recipes and varieties that eggs are prepared as there are restaurants. Yet one thing is common that you would enjoy standing next to a chef and watch him cook your eggs for you. It is a hub of very quick activity as onions and tomatoes and green peppers and chilies are chopped and diced with an eye on heating griddle. Eggs are cracked and are whisked or even directly add to the hot tawa (griddle). There is sound of chopping, cracking and the sizzle. There is also the smell from red chili powder hitting the foaming butter and it all leads to the moment when you lay your hands on a hot greased toasty bun. The Bun omelette masala is not the only recipe you would get here, there also is a sandwich made with omelette and sliced white bread which may or many not be toasted.
Its with these memories as inspiration that we make out Bun Omelette masala. We make eggs many different ways. We love ours scrambled, poached, left easy, as stuffed omelettes, cooked in a pot or even boiled and sometimes boiled and grated into a scramble. We do it many ways inspired by many cuisines. So it was but imperative that we share the Bun Omelette Masala recipe inspired by our home cuisine as well.
All you need is a good pan and a few ingredients on hand and within a few minutes this thing is ready for devouring. We use a little bit of oil and before adding the eggs we make sure it is hot so that the initial curd is formed quickly and we get an omelette that does not stick to the pan. Here it is important to shake the pan back and forth when you pour the egg into the pan. This ensures the egg spreads but also that it doesn’t stick. We do the further cooking on lowered heat making sure to be gentle on the egg as possible. We mostly cook the whole thing in the same pan, even toasting the buns. We add a touch of masala to the eggs as well as while toasting the bun and it sets your taste buds awake from the heat. If you dont like a lot of heat you can use milder chili powders or less of it. We keep it pretty simple with the Masala. We use onions and green peppers and optionally chilies as our vegetables and salt turmeric and red chili powder as our spice. One could just use the curry powder that many pantries in US and UK have for the spice powder. The cheese added to the bun omelette masala is optional and the one used back home is most certainely a processed buffalo milk sharp cheddar of the amul brand. Here you can just as well use amul cheese cubes if you find them or use a sharp white cheddar. We use a wisconsin produced sharp white cheddar quite happily. In india this is almost always served with tomato ketchup as dressing. However we are in the middle of a great tomoato season and hence we used thin slices of heirloom tomatos which bring a nicer acidity and sweetness like a ketchup.

As one can see this is quick to make and most ingredients other than a couple of spices are on hand at most deli’s. How we wish that a few of the brunch places try this out and that we could go order these and have someone else make these for us.

Ingredients
- 2 eggs cracked into a bowl
- 1 brioche bun or hamburger bun
- 3 tsp oil
- 2 tsp chopped onion
- 2 tsp chopped green pepper
- 1 small green chili (thai pepper) chopped (optional)
- 4 slices tomato
- 1 Ttsp grated white sharp cheddar
- few sprigs cilantro
- 1 tsp turmeric
- 1 tsp salt
- 1 tsp red chili powder
Instructions
- – Add 2 tsp oil to pan and heat on medium high heat till oil is hot
- – reduce heat to mediuma nd while shaking the pan add the two eggs and break the egg yellow to spread it
- – add onions, green pepper and chilies over the eggs
- – sprinkle half of the red chili powder, turmeric and salt
- – lay the split open halves of the bun with the insides down on the eggs
- – sprinkle rest of salt turmeric and red chili powder onto the bun and drizzle with 1 tsp oil
- – flip to toast the buns
- – add grated cheese, tomato slices and herbs over the omelette side
- – close the top half of the omelette bun over the bottom half and plate
