With the summer heat rising, cold noodles are a great way to beat the heat while enjoying your bowl of noodles. Noodles are typically popular as a hot dish but we are in love with cold noodles of all kinds. The favorite ofcourse are the inaniwa udon served at Sumi Robata Bar in Chicago. But we have made cold soba noodles at home as well in the past. When Willy street coop started carrying zucchini spirals i always wanted to try them out in the form of cold noodles dish.
We first made a dressing with mirin, soy sauce, seasame oil, ginger paste, wasabi paste and lime juice.
We then marinated a cup of the zucchini spirals in this dressing and kept it in the fridge. This softens the zucchini a bit since we dont quite cook it seperately. Also its important to have the zucchini and the dressing really cold since it really helps the sharp umami taste shine through on summer evenings.
We then prepared other vegetables like thin strings of white radish, carrot, deseeded half thick rings of cucumber, spring onions thinly sliced and kept in ice water, purple cabbage, red peppers sliced thin. It is good to use a japanese mandolin slicer for the prep if you have one.
Keep the prepared vegetables in the refrigerator. Once the zucchchini is a bit marinated in dressing, add the vegetables and mix. We top with some black sesame seeds.
Drop a couple of icecubes at the very end around the dish to keep it cold as you eat.

Cold zucchini noodles with other thinly sliced vegetables and a wasabi ginger lime juice and soy dressing
Ingredients
- 1 cup zucchini spirals
- 4 tsp thinly sliced scallions
- half red bell pepper thinly sliced
- 0.25 cups thinly sliced purple cabbage
- 0.5 cup cucumber halved vertically, deseeded and cut into 10 mm half moon pieces on the bias
- 0.25 cup daikon radish thinly sliced and then chopped into thin strings
- 0.25 cup thin strings of carrot
- 1 tsp black sesame seeds
- For the Dressing:
- 0.5 Tbsp Soy Sauce
- 0.5 Tbsp Mirin
- 0.5 Tbsp Finely grated ginger
- 0.5 tsp wasabi paste
- 0.5 tsp sugar
- 2 tsp Sesame Oil
- 2 Tbsp Lime juice (for a variation try orange juice or a mixture)
Instructions
- Mix all ingredients for dressing with the zucchini spirals and marinate in refrigerator for 30 minutes
- Mix all other ingredients, season to taste
- Serve in a plate, spooning some dressing over top and also sprinkling some sesame seeds
- Serve immediately and very cold, adding a couple of icecubes just before serving to maintain the cold temperature
