The Dilli Chaat Flavors
Recently on our trip in Pune we were lucky to sample some Dilli Chaat flavors when we ate at a restaurant called Dilli Chaat Darbar.
Above is a picture of the aloo tikki chaat we had there. We absolutely loved the sweet and sour flavors balancing the creamy dahi in dahi bhallas. It had hints of cooling mint and a tang from tamarind and anardana. The flavors were of balanced intensity, not bold enough to overpower but present enough to take notice.
Dilli Guacamole
Inspired by the dahi bhalla we had we decided to spike our guacamole similarly. We created a dressing by grinding ginger, chopped fresh cilantro, green chili, mint and lime juice. We created a dry seasoning with toasted cumin and dried pomegranate seeds. The ground cumin and pomegranate seed adds a earthy and toned sour flavors which makes the flavors very playful and works great with the creamy flavors of avocado. We then chopped avocado and dressed the cubes with the dressing and the seasoning, salt. We mashed them together a bit as we did. We added some chopped onions and chilies to mix and finished with some fresh pomegranate seeds and a squeeze of lime. A sprinkling of the dry seasoning and our sweet, sour and creamy guacamole was ready dilli style!
