We decided to break out our Appe Pan / Aebleskiver Pan to make these dutch apple pancakes. Well they look more like doughnuts, but we made them using pancake batter. Well not exactly the pancake batter that we are used to in the USA. The ones that are more common here are light and spongy and soak up a ton of syrup. They are good as well.
However at an Israeli restaurant which was more like a deli and named Yossi’s in suburban detroit i once saw Dutch Apple Pancakes on the menu. Our hostess urged us to try these and i have been hooked ever since. Unfortunately Yossi’s closed five years back and i have had to rely on cooking them ourselves.
The dutch apple pancakes are more custardy. The low heat skillet cooking caramelizes the crust unlike the fluffy pancakes we are used to here. The crust gets crisp and the inside is creamy and custardy. We used to make these in a pan and there are recipes which bake them in an oven. I was told by Yossi that these pancakes are more dutch but i have seen something similar also called german pancakes. I also heard that the dutch was a mispronunciation of deutsch over time!
Since the part most appealing to me and unique about these was the crispy caramelized crust, i figure we will get more of it if we bake them in the Appe / Aebleskiver pan. It is a griddle that goes on the cooking range and has semi doughnut shaped holes. One can be found here but we got ours from back home and there it is used to make paniyaram/appe. For our dutch apple pancake we use a mixture of egg, milk and flour for our batter and also add a tea spoon of brown butter to get nice caramelized color on the pancakes. We were quite happy with the result since they also cooked a bit quicker in the appe pan as well. The small doughnut size for these is great for sharing which is good since the recipe uses decent amounts of butter and powdered sugar.
We dust ours with cinnamon which pairs perfectly with the apples as well as powdered sugar and a drizzle of maple syrup. When you bite cut them in half, you can see the custardy interior which you can mop up the syrup and the sugar with.
We made a vine when we were having fun cooking these. Although pancakes are usually for breakfast we end up having these any time of the day when we have a craving for these. They would go great with a scoop of vanilla ice cream as well, but we realized this today right after we had wiped our plate clean!
Dutch Apple Pancakes

Description
We use our appe / Aebleskiver pan to make these dutch apple pancakes.
Ingredients
- 1 Apple peeled and diced
- 4 tsp butter
- 1 egg
- 0.5 cup Milk
- 1/2 cup all purpose flour or wheat flour
- 1 tsp vanilla paste
- 3 table spoons sugar
- 0.25 cup maple syrup
- 1 to 2 tsp Cinnamon Powder
- 1 to 2 tsp confectioners Sugar
Instructions
- Melt 2 tsp butter in a pan and add peeled diced apples to cook covered on low-medium heat stirring every now and then till soft
- whisk on whole egg and add the flour to combine along-with whisking the milk, sugar, vanilla paste and pinch of salt
- When the apple are done add them to the batter
- To the pan add 1 tsp butter and heat on medium till foamy and then brown to make brown butter and add to the batter and mix
- Set Appe / aebleskiver pan on medium heat and brush the rounds with butter
- Spoon the batter ine ach hemispherical mould
- Cook covered till a crust is formed
- Use the pointed wooden turner to slide the semi spherical pancakes halfway out
- Spoon more batter on the side of the pancakes standing halfway out and then flip the semi spherical pancakes over the newly poured batter to form the upper dome
- Cook covered till pancakes are cooked on low to medium heat
- Add a tsp of confectioners sugar to 1 tsp melted butter and brush this mixture like a glaze on the pancakes and flip them to cook on medium heat watching carefully not to let the sugar burn, flip and repeat for the other side. they should have formed a golden brown shiny crust on both sides.
- Plate the pancakes in a stack and dust with freshly ground cinnamon powder and confectioners sugar
- Pour some maple syrup to taste on the pancakes table side and serve some more on the side
