Msco Patisserie has opened right next door as a connected space to Madison Sourdough Company. You enter the space and are greeted by some really alluring choices arranged in a glass pastry case alongwith the gelato case by its side.
The patissiers are patient as you make your choice and there are usually samples of gelatos or one of the pastries available. We have been there a few times now and once we went with a bunch of friends and each picked a pastry of vhoice and then we had a tasting of them over at home paired with some good bubbly.
My favourite so far has been the gateau basque. The filling is many times based on seasonal fruit and the one pictured below in left corner with a cherry on top had a cherry filling. The gateau basque shell is nutty from the almond flour and crumbly. The filling is not too sweet with a hint of tartness to cut the richness of the pastry. We also enjoyed the opera cake with hint of coffee.
We also tried the cannele de bordeaux excitedly as its a rare one to find. It requires special canele molds which are striated and most times made of copper. They need to be seasoned with beeswax a bunch of times so the pastry does not stick. The result is supposed to be custardy interior after biting into the crunchy caramely exterior. The one here was good but was a bit soft for our liking on the outside. This is such an exacting pastry to perfect though that we have not much complaints and would try again.
Another treat we loce here are the financiers which are available in different flavors depending on bakers choice. This is something we bring home in half dozens and freeze them so we dont have to drive all the way to buy them to finance our next craving. A good little piece of cake without any buttercream frosting is so undervalued. This is my favorite indulgence with an espresso or a glass of cold milk. This one is made wirh almond flour and is light and moist like a sponge cake but distinctly nutty in flavor from the almonds as well as the browned butter. It is shaped in the form of a gold brick and for us is worth its weight in gold for the portioned treat it makes even out of the refeigerator.
We also love the little bar they have created if you decide to partake the pastry here and can also order some individual sized sparkling bottles. We only wish MsCo Patissierie would be open late because it would be really fun to finish dinner and then come here for dessert.
