Grilled Broccolini Rice Bowl


Ingredients

  • 1 cup short grain young sushi rice, washed multiple times by swirling and soaked for 20 minutes
  • 1 cup + 2 Tbsp water
  • 8 Broccolini florets with tender stalks
  • 1 Tbsp vinegar (we used a yuzu vinegar, but rice wine vinegar also works well)
  • 0.5 cup greek full fat yogurt
  • 1 tsp crushed ginger and garlic
  • 1 tsp white pepper
  • Salt for seasoning
  • 1 tsp thinly sliced and fried crispy shallots

Instructions

  1. Pre-heat oven to 400 F.
  2. Marinate broccolini in yogurt, ginger garlic, white pepper and salt mixture.
  3. Cook soaked short grain rice on medium high heat and covered for 13 minutes letting the steam escape gently. Rest for 20 minutes.
  4. Cook Brocoolini in a well oiled sheetpan for 20 minutes.
  5. Uncover the rice and add the vinegar and gently mix. Serve in two bowls.
  6. Top with cooked broccolini and fried shallots distributed in the two bowls.
  7. Enjoy while warm.
