A Life-changing Cauliflower
Roasted Cauliflower was trending all of 2017. Numerous chef’s were putting it on their menus giving it character of many different countries. The chef responsible to start this trend was Chef Eyal Shani and his creation is nothing short of genius. At the heart is its simplicity but we are calling this the life changing cauliflower.
It starts with taking a freshly harvested whole head of cauliflower whose stem you cut so that it can stand on the stem head-up. Then set a pot with enough water added to hold it submerged and with some sea salt. Once boiling add the cauliflower head down and cook for ten minutes or so. Also set the oven to pre-heat at 440F.
Then take out the cauliflower and stand it head-up. You can see the steam escaping. Take some olive oil in your hands and spread it on your palms. Then gently massage your palms on the cauliflower. Sprinkle some sea salt.
Roast in oven for 30 to 40 mins till the florets turn soft yellow in color. Take out and drizzle with olive oil, it will absorb it a bit. Season with some sea salt sparingly.
When it cooled just a little bit to touch we found ourself robbing the florets off with our fingers like you would tender meat. It was divine and frankly in that moment the best cauliflower we had tasted. You can carve out the florets and stems with your knife and use it in various different ways.
