Saigon Sandwich is a food cart which is open in lunch hours mostly on UW campus. They mostly post their location changes on their facebook page. Their speciality is vietnamese style banh mi sandwiches. This is something that is available at very few places in Madison and of those this pretty mich ranks quite up there for me. For me a satisfactory banh mi depends on the baguette (which  is more of a roll here), the pickled carrots and daikon which really lift this sandwich up and the fresh herbs and some heat. The cart allows you to choose a protein and you can choose your vegetables and all the options on a form and hand it. In a few minutes you are rewarded with a neatly packed banh mi to savor. It is about 5$ for a sandwich so makes quite a value treat for lunch. Jalapenos bring the heat and the pickles are wonderful to add brightness to the sandwich and the cilantro brings the freshness.

I have tried both the chicken and tofu and loved them.
